100g Egg yolk

75g   Egg white

50g   Sugar

500g Mascarpone

300g Chocolate strudel

600g Water

5g      Instant coffee

15g    Marsala vino

Cocoa

  1. Place the yolks, egg whites and sugar in a mixing bowl.
  2. Mix the ingredients with a whisk over a warm water bath until creamy.
  3. Fold the mascarpone into the mixture.
  4. Pour the cold espresso into a plate.
  5. Take the individual Schmid chocolate strudels out of the packaging and dip them into the espresso.
  6. Lay a level in a glass mold with the Schmid Schoko Strudel.
  7. Spread a layer of creamy mass over it and repeat the process until the mold is completely laid out.
