300g  Schmid Fig Strudel

250ml  milk

250ml  cream

3           egg yolks

50g       sugar

1           vanilla bean

Cinammon

  1. Mix the egg yolks and sugar with a whisk
  2. Place the milk, cream and vanilla bean in a saucepan
  3. Cook everything up
  4. Mix the vanilla cream with the egg yolk and the sugar.
  5. Stir everything together until creamy and cook it up to about 84 degrees on the stove.
  6. Take the pot off the stove
  7. Strain the cream through a sieve.
  8. Pour the warm cream onto a plate and drape the Schmid Feigen Strudel on the plate.
