300g Schmid Fig Strudel
250ml milk
250ml cream
3 egg yolks
50g sugar
1 vanilla bean
Cinammon
PREPARATION
- Mix the egg yolks and sugar with a whisk
- Place the milk, cream and vanilla bean in a saucepan
- Cook everything up
- Mix the vanilla cream with the egg yolk and the sugar.
- Stir everything together until creamy and cook it up to about 84 degrees on the stove.
- Take the pot off the stove
- Strain the cream through a sieve.
- Pour the warm cream onto a plate and drape the Schmid Feigen Strudel on the plate.
